Octopus salad with celery, potatoes and Aromatico oil



Ingredients for eight:


2 kg (4 1/2 lb) very fresh octopus, a large celery head, 1 kg ( 2 lb) potatoes, 2 cloves of garlic, 2 bay leaves, ½ glass Aromatico oil, salt


Wash and trim the octopus well, then cook it in boiling water with a little salt, 2 bay leaves and 2 cloves of garlic, (in a pressure cooker this will take about 30 minutes). Leave it to cool in the cooking water then drain it; use the same water to cook the potatoes. In the meantime chop the celery and the octopus, put them into a serving dish. Add the hot, sliced potatoes, dress with Aromatico oil and salt to taste.
