Courgette rolls with ricotta mousse and Tulsi oil


Ingredients for two:

Courgette, ricotta, cooked ham, Tulsi oil, white wine vinegar, salt to taste.

Cut the courgette lenthways with a potato peeler and put them into the oil and vinegar mixture for 15 minutes. In the meantime finely chop the ham and blend it with the ricotta. Place this mixture in the middle of each slice of courgette and roll them up. Serve drizzled with a little oil.
