Curried fillet steak with Mustard oil

Ingredients for 6-8

53 oz filet steak in one piece, 8,45 fl.oz single cream, 1 onion (chopped), the juice of one lemon, a level teaspoon of strong paprika, 4 teaspoons of fresh curry powder, 6 dessert spoons of Mustard oil, 1 glass of stock, 1 oz flour to coat the meat, salt and pepper

In a high sided saucepan brown the onion slightly. Coat the meat with flour, tie it and brown it in the saucepan with the onions, turning with the help of two spoons. Reduce the heat, cover and cook gently for 20 minutes, salt to taste after ten minutes.

In the meantime dissolve the curry powder and the paprika in the stock and pour it onto the meat while it is cooking, a spoonful at a time. Remove the steak and keep it warm, add the cream to the juices in the bottom of the pan and add salt and pepper to taste then the lemon juice. Slice the steak and arrange it on a warmed serving dish, drizzle the sauce over and serve with pilaf rice or toasted polenta.
