Hunter’s chicken with Ginger

 

Ingredients for four

 

26.50 oz chicken pieces, a shallot, a clove of garlic, a bunch of parsley, 2 sage leaves, a sprig of rosemary, 1.75 oz stoned black olives, a spoonful of capers in vinegar, ½ glass red wine, ½ glass Ginger oil, 3 spoonfuls of wine vinegar, a piece of chilli pepper, salt. 

 

Chop the onion finely together with the garlic, rosemary leaves (remove the stick), the sage and a piece of chilli pepper, fry in the Ginger oil until lightly browned then add the chicken and brown this too. Add the wine and let it evaporate, add a mixture of chopped olives and capers then add the vinegar. Add salt to taste and finish cooking on a low heat, stirring occasionally. Before serving add some chopped parsley.
