Tasty stewed vegetables with Mirto oil


Ingredients for two

1 aubergine, 2 courgettes, Mirto oil, salt, 2 eggs, 3,5 oz pecorino cheese, white pepper

Wash, peel and cut the aubergine into cubes. Wash and trim the courgettes, cut into cubes without peeling. In a heavy pan stew the vegetables with the Mirto oil for about 45 minutes.
Hard boil the eggs and cut carefully into thin slices.
Cut the pecorino cheese into cubes.
Leave the vegetables to cool and add the eggs and cheese.
Dress with a little Aromatico oil and a pinch of white pepper.
