Salt cod with Mandarino oil

 

Ingredients for 6

 

35,30 oz softened dried cod fillet, 4 mandarins, 2 tablespoons of raisins, 2 apples, 1 onion, 4 tablespoons Mandarino oil, 1 large sprig of mint, salt and ground pepper

 

Peel and cut the dried cod fillet into small pieces, peel and slice the mandarins, peel and dice the apples, leave the raisins to soak for a couple of hours in warm water.

Brown the onion in a pan with oil, add the raisins, cook until the flavours are well mixed then add the dried cod, salt and pepper and cook for about 10 minutes. Add the apples and the mandarins, cook for 10 more minutes. Serve decorated with mint leaves.
