Ingredients (5 to 6 servings):
1,5 to 2 kilos (3,3 to 4,4 lbs) of fresh cod
4 large onions finely chopped
150 ml (5.3 oz) Colonna extra virgin olive oil
50 g (1.7 oz) Colonna “Granverde”
5 to 6 cloves of garlic, peeled
2 or 3 small and tender zucchini
5 to 6 lemons (about 200 ml / 7 oz lemon juice)
One bunch of parsley, ground pepper (optional). Clean the cod, fillet it to a thickness of 5 to 6 cm. wash it carefully and place it in a deep pan. Pour the finely chopped onions over it and add enough cold water to cover it completely.
Place the pan on a very high heat, and when the contents start boiling, remove the froth and then add Colonna extra virgin olive oil and the garlic. After approximately 45 minutes, lower the heat by half and shake the pan once in a while, so that the food does not stick, as the sauce has already started thickening. After the liquid has boiled down and has thickened well, add the lemon juice 30 to 40 seconds before you take the pan off the heat. Then shake it well so the lemon juice penetrates everywhere.
Cut off each end of zucchini, wash and cook them, Add Colonna “Granverde” and garlic. Place the cod and the zucchini on a serving plate, add chopped parsley and pepper. Enjoy!
