Turbot fillet au gratin with Granverde oil

Ingredients serves 4 :
1 kg turbot sliced in 4 fillets
Granverde Colonna oil
Salt and pepper to taste
1 cup of white wine
Garlic, parsley, basil, mint
A red onion
An anchovy fillet
50g of bredcrumbs

Marinate the turbot fillets with Granverde oil, white wine, garlic, basil, parsley, pepper and a glass od fish stock. In a pan put some Granverde oil, melt the anchovy fillet and season it with some garlic. Leave to cool down, then add 50 gr. of breadcrumbs with a chopped slice of the red onion, basil, parsley, mint and lemon rind. Season and leave for 1/2 hour. Place into an oven pan the fish fillet covered with the flavored breadcrumbs. Cook in the oven for 4-6 minutes at 150°, then serve.
