Baked courgette and anchovies with Granverde oil

Ingredients for six

17,65 oz courgette, 35,30 oz fresh anchovies (trimmed and filleted) half red onion, 3,5 oz breadcrumbs, 1 tbs of grated parmesan, a sprig of chopped parsley, the grated rind of one lemon, salt and pepper, ½ glass Granverde oil, ½ glass extra virgin olive oil.


Chop the courgette into cubes; in a large pan warm the extra virgin olive oil and sweat the finely chopped onion, then add the courgette and cook rapidly over a high heat. Add salt and pepper to taste. Mix together: breadcrumbs, Granverde oil, cheese, parsley and lemon rind. Take an ovenproof pan and layer the anchovies with the courgette pieces and the breadcrumbs.

Bake at 175° C for 20 minuti.
