Cous Cous Pollo 003

Cous cous with chicken, vegetables, almonds and Arancio oil

 

Ingredients for four:

 

 

160 (about 5,6 oz) cous cous, 1 large courgette, 2 carrots, 4 slices of chicken breast, 3 tablespoons of sliced almonds, Arancio oil, extra virgin olive oil

 

Clean and slice the carrots and courgette. Grill the courgette and parboil the carrots before grilling these as well. Grill the chicken and cut into strips, when ready prepare the cous cous according to the instructions on the packet. Stir in some Arancio oil mixed in equal quantities with extra virgin olive oil. Mix the other ingredients into the cous cous and add the almonds leaving some to use as decoration on top. Serve with a little more Arancio oil.
