Almond Cake with Granverde


8,8 oz peeled almonds, 7 oz sugar, 4,4 fl.oz. Granverde oil, 5 eggs, the peel of one lemon

Mince the almonds with sugar, place the yolks in a bowl and whip until the mixture becomes foamy and, while mixing well, add the almonds with sugar, oil and, finally, the egg whites beaten stiff.

Pour the mix into a round mould (26 cm) and bake for about 30 minutes in preheated oven at 200°.

Serve cold after sprinkling with icing sugar and roughly grated lemon peel.
