Savory-Spinach-Feta-Peppadew-Muffins

Savoury muffins with Myrtle oil

Ingredients for 6 large muffins:
250 g Manitoba flour, 150 g mature ricotta, two medium sized sausages, 1 red onion, 100 ml milk, 100 g of Greek yogurt, 2 tbs Mirto oil, 2 eggs
1/2 tsp dried yeast
Salt and black pepper to taste

 

Peel the onion and chop it finely. Cook it on low heat in a pan with a drizzle of olive oil and, when it begins to be transparent, add the sausage meat without the skin. Cook for a few minutes turning occasionally. In a large bowl, sieve the flour, yeast, grated ricotta, salt to taste and freshly ground pepper. Mix in the sausage and onion. In a separate bowl mix the liquid ingredients: beating the eggs with the milk, yogurt and oil.
Now add the liquid ingredients to the dry ones, mix them working the dough as little as possible.
Pour the mixture into a muffin pan, about 2/3 full, sprinkle the top with some grated cheese and bake in a preheated oven at 180°C for 35 minutes. Serve the muffins warm or cold and decorate with some red onion cooked with red wine for about ten minutes.
