Artichoke salad, roe, lime and ginger oil
Ingredients for 2:
30 g fish roe,
Carefully clean the artichokes by removing the outer leaves that are tough. Divide the artichoke in half, removing the fluffy part in the centre. Place the pieces of the artichoke in a bowl with cold water and the juice of ½ lemon to avoid the artichoke becoming black, leave to infuse. Once ready, slice the artichokes thinly and drain well. Dress with shavings of fish roe, lime, salt and Ginger oil.
