Aubergines with Cardamom Oil (AROMATICO)
2 long aubergines,
5 fresh white spring onions,
Persian blue salt.
Wash the aubergines, peel and cut them into chunks; cut the spring onions in slices. Place the vegetables in a pan with high rims, salt lightly and season with Aromatic oil. Bake for about 20 minutes stirring often, add a little water if needed. A side dish that can also be served cold, adding feta cheese cubes and a drizzle of Aromatic oil.
