Cold rice salad with sesame seeds, tuna and Granverde oil
Ingredients (serves 3/4 persons):
250 g/8.8 oz Acquerello Rice,
1 large tomato,
80g/2.9 oz feta Cheese,
160g/5.6 oz tuna fillet,
1 handful of rinsed Pantelleria capers,
A large fresh red onion,
2 anchovies in oil,
black organic sesame seeds.
Boil the rice in salted water, in the meantime cut the tomatoes with the onions and anchovies. Crumble the feta cheese and the tuna.
Drain the rice, fold in all the ingredients and season with Granverde oil.
Place in the fridge, sprinkle the sesame seeds,and serve at room temperature.
