Donut with Mandarino Oil
Ingredients (for a 24 cm donut mold):
300 gr (10.58 oz) flour,
200 gr (7.05 oz) granulated sugar,
125 gr (4.4 oz) natural yogurt,
70 gr (2.46 oz) Mandarin oil,
50 gr (1.76 oz) corn starch,
1 sachet of baking powder for cakes,
3 organic tangerines,
1 pinch of salt,
3 medium eggs,
icing sugar to taste.
Method:
Wash the mandarins, cut them in half and remove all the stones. Then whisk very well with a mixer. Whisk the eggs with the sugar until the mixture is light and fluffy. Add yogurt, oil, tangerines purée and whisk together. Add the flour, starch, sifted baking powder and a pinch of salt. Grease and flour a donut mold and pour the mixture. Bake at 180° C for 40-45 minutes, always checking with a toothpick. Remove from the oven and let it cool. Before serving, sprinkle the surface with icing sugar. You can enrich it with a tangerine or chocolate glaze.
