PACCHERI PASTA WITH GRILLED SWORDFISH IN JUNIPER OIL, BLACK OLIVES AND PRIMOSALE GOAT CHEES
Ingredients for 3:
220 gr (7,76 oz) paccheri pasta,
100 gr (3,527 oz) primosale goat cheese,
3 handful of cherry tomatoes,
1 swordfish steak,
2 tbsp of Colonna Juniper oil,
seasoned black olives,
Nera di Colonna extra virgin olive,
Classic oil to dress.
Method:
cook the paccheri following the instructions on the package. In the meantime preheat a griddle pan until very hot. Place the swordfish onto the griddle pan with a tbsp of Juniper oil and cook for few minutes on each side. Leave to cool, than dice it together with the primosale goat cheese and put them in bowl, add the cherry tomatoes, Nera di Colonna black olives, two more tbsp of Juniper oil, salt and white pepper. Once cooked, drain the paccheri and place them in the bowl, mix well adding extra virgin olive, Classic oil and some more white pepper. Serve warm, enjoy!
