PASTA WITH SPICY VEGETABLES AND PEPERONCINO OIL

Ingredients for 4:
350 g (about 12.35 oz) pasta,
1 yellow pepper ,
1 red pepper ,
2 courgettes,
10 cherry tomatoes,
basil,
garlic and chilli pepper,
Peperoncino oil,
grated cheese,
salt.

Method:
Cook the pasta in salt water, in the meantime wash the peppers and courgette, dry them and cut them into thin strips (julienne). Brown the garlic in a pan with the Peperoncino oil, add the vegetables, and add the tomatoes chopped in half. Mix occasionally and half way through cooking add the basil and a little Peperoncino oil. Cook for a further 15 minutes and add the cooked pasta, Serve hot with a sprinkling of cheese a drizzle of Peperoncino oil.
