Risotto with carrots and Sage oil
Ingredients for 3 persons:
3 organic carrots,
1 onion,
250 g / 8.8 oz. rice,
Half glass white wine,
Vegetable stock,
4 tbsp.Salvia oil.
Method:
Clean the onion and the carrots, cut them in little pieces and let them stew with Salvia oil. Add the rice and toast it for a few minutes, deglaze with white wine, allow it to evaporate. Cook the rice for 18-20 minutes adding the vegetable stock one ladle at a time, until it is cooked. Garnish with a sage leaf; for a more tasty flavour add a handful of shaved parmigiano cheese and mix until it gets creamy.
