Savoury muffins with Myrtle oil

Ingredients for 6 large muffins:

250 gr/8.8 oz Manitoba flour,
150 gr/5.3 oz salted ricotta cheese,
Two medium size sausages,
1 red onion,
100 ml /3.4 oz milk,
100 gr/5.5 oz Greek yogurt,
2 tbsps Mirto oil,
2 eggs,
1/2 tsp dried yeast,
Salt and black pepper to taste.

Peel the onion and chop it finely. Cook it on low heat in a pan with a drizzle of olive oil and, when it begins to be transparent, add the sausage meat without the skin. Cook for a few minutes turning occasionally.
Sieve the flour in a large bowl with high edges, together with the yeast and the grated ricotta, salt to taste and freshly ground pepper. Mix in the previously cooked sausage and the onion. In a separate bowl mix the liquid ingredients: beating the eggs with the milk, yogurt and oil.
Combine the liquid to the solid ingredients trying to mix them working the dough very carefully.
Pour the dough in the molds covering each one by 2/3, sprinkle the top with grated ricotta cheese and bake in a preheated oven at 1 80 for 35 minutes. Serve the cool or cold muffins covered by the red onion previously cooked in red wine for approx.. 10 minutes.
