A refined trilogy of balsamic vinegars— Organic Red and White,  Rosé—crafted in Modena with the same dedication to balance, purity, and palate. Each expression reveals a unique personality, while sharing the Colonna hallmark: quality and flavor.

Origin and Aromatic Profile

Each vinegar is made from select grape musts and wine vinegars, following traditional Modena barrel aging methods.

An aromatic balance in which cooked must and ripe fruit meet subtle woody nuances, creating rounded and expressive profiles, perfect for both everyday cooking and gourmet pairings.

Organic Red – Intense and rich, with notes of cooked must, ripe fruit, and wood. A classic Balsamic Vinegar of Modena PGI, full-bodied and with a sweet and sour intensity.

Organic White – Bright and delicate, it pleasantly surprises with its unique flavor. Its aroma is fresh and delicate, with light fruity notes and a delicate acidity.

Rosé – Unique and elegant, made from Trebbiano Modenese must and Ancellotta essence. Rosé, floral, and balanced, aged in barrels.

The consistency defines the presence of each vinegar on the palate: the Organic Red offers a rounded and persistent body; the Organic White is light and vibrant; the Rosé is smooth and harmonious.
